Scalloped Potatoes--reply to yesterday's request
Here are a couple of great and easy scalloped potato recipes. I've used sweet potatoes, white (russet) potatoes, and a combination of the two. Both are great baked in the Egg, over a platesetter/pizza stone. Oh, yeah--I usually add sliced onions, too. But that's just me.

SWEET POTATO GRATIN WITH SMOKED CHILES[p]Copyright 1999 by Bobby Flay. All rights reserved[p]2 1/2 cups heavy cream
1 tablespoon chipotle puree
3 medium sweet potatoes, peeled and sliced thin
Salt and freshly ground pepper[p]Preheat oven to 350 degrees.[p]Combine the heavy cream and chipotle puree in a small bowl. In an 8 by
8-inch baking dish, arrange a fourth of the sweet potatoes. Season to taste
with salt and pepper and pour a fourth of the cream over it. Repeat with the
remaining potatoes and cream, forming 4 layers.[p]Bake for 1 hour or until the cream has been absorbed and the potatoes are
browned. Remove from the oven and let sit 10 minutes before serving.[p]Yield: 4 servings
Prep Time: 20 minutes
Cooking Time: 1 hours 10 minutes[p]
World's Best Scalloped Potatoes[p]Recipe By: tpogue@ex-pressnet.com
Serving Size: 8[p]3 1/2 pounds yukon gold potatoes, peeled and sliced
OR
3 1/2 pounds potatoes, Red Bliss with skins on, sliced
2 cups heavy cream
1 package 5 oz of herbed cheese like Boursin (or Alouette)[p]Melt the cheese in the whipping cream until smooth. Pour over the sliced potatoes and cover with foil. Bake for 45 minutes at 350F Remove foil the last 15 minutes of baking to brown.[p]Do not layer them more than three of four slices of potato done on medium slice say about 1/4 inch thick[p]Notes: Try this sauce over pasta for a fast Alfredo. Just add a dash of nutmeg.[p]

Gretl Collins,[p]By over "platesetter/pizza stone", do you mean right on top of the platesetter without the grid (like pizza) or on top of grid with platesetter in place (like indirect)? I've been invited to two parties Saturday, and I know your scalloped spuds would be a big hit.[p]Thanks.[p]Paul

I just mean indirect, so the bottom of the casserole doesn't burn. Whatever method you come up with!
