I cooked some\'en: NY strips,stuff chop&onions

Started off day deep in the hole so to speak. Wife had a Dr. appointment at 10:30 to see if her iron transfusion worked and alarm didn't go off. 9:55 I realized it! :blink: Made it just in time to sit for and hour and half waiting for to get blood drawn then another hour to see the vet to get told the results will not be back for a couple days.
Course the Dr.s main specialest it cancer and cemo. Room full of cancer victoms. Talked for a while to a 50 year old man with lung cancer and a 13 year old daughter. Bless him. Waiting in a Dr. office for 2 hours really an't that big of deal suddenly is it. After the Dr. was behind the 8 ball rest of the day.
Will say right up front. Chops were over cooked for me which was my main food group and the stake was under cooked for wife which was her main food group. Some days it just doesn't pay! :laugh: Anyway lets see what I did and what not to do. The raws:

Rubbed the NY down with some DP's Redeye, sea salt and pepper both sides and covered with plastic wrap and stuck in frig. Next stuffed the chops by making a pocket with my Chicigo Cuttlery knife threw the bone. Note my good Hattori was not used to cut bone. Sometimes I love my Chicigo almost as much as the Hattori! Stuffed it with a teaspoon Itialian bread crumbs, one partially cooked slice of slab bacon and a fat slice of white American cheese. Keep it simple.

Next up a couple purple onions slice 3/4 way threw with EVOO, salt, cracked pepper, DP's Tausmania Spin and Caveman sause wrapped in foil leaving a opening on top for the presimmon smoke to get to it.

Put the onions on about 30 min. early indirect at 300 then put the chops on with them for about 45 min. Yea I lost track of time trying to wean calfs off there mothers, feeding horses and such. Not enough hours in the day!

Next bring the Egg up to nuke temp and toss on the strips for a min. each side then repeat again. Kill fire with vents almost and cook another 3 min a side at around 350-400 and pulled.

Actually the stake was about right for me. Between a rair and medium rair but not for her. Chops were not bad as well BECAUSE of the stuffing keeping them moist. Cheated the system so to speak. Onion was perfect.


Went duck hunting yesterday. No ducks but a couple Eagles in the swamps was neat to see. Normally don't make it this far South.

Well JL, sorry your day was askew. I've been there! Your cook looks great from here. I know we can be critical of our cooks. Great shots of them eagles!! I was eagle watching on Sat. Just saw where they hang out on the rocks edge, lot's of drippings.
