How low is low? - 275?
Looks fantastic - I do thighs all the time, they're my favorite.. Generally I've cooked indirect but at a higher temp (325-350). To me the key is crispiness of the skin. Usually use a tequila lime marinade (w/cilantro/cumin/garlic/oninion/pepper/ancho chili.. (mmmm). -
