if i've said it once, i've said it a thousand times... its all about the gravy folks...make the greatest turkey in the world, but if you pour pedestrian gravy all over it, you have a pedestrian meal. ...make an average turkey, but make great gravy, and you will still have a meal that folks will rave about...yet people are still intimidated by something that is really pretty easy to do....so read today's tip, and go for it!!....and now you can even watch the video (the third one shows you how to do it) at mad max turkey central to see how its done!!!

  • This is presumptuous on my part but if I can add one suggestion to the preparation of your delicious gravy after one attempt. Try to use a smooth bottomed pan when making gravy. I used a throw away aluminum pan which had all kinds of indentations on the bottom, presumably to act as some type of trivet. Problem is when you start to make the roux a lot of the crusty goodness gets caught up in those crevasses. It still works, but a smooth bottom pan should work better.

    I will be investing in a real pan for my next turkey and not rely on the cheapo aluminum pans.
