warned him about a flashback...he had capped and closed bottom vent for 1 minute dwell on home aged steaks...
:ermm: he opened dome about 2" very slowly, waited, then proceeded, very slowly, until dome about 2/3 open
:woohoo: then it happened :ohmy:
the big "Whooosssshhh", the flames rolling up and around the dome's interior from back to front, and his 1st Egg Badge of Honor


He did hold kilt out of way and stood off side for the opening...but lots of singed arm hair was brushed off kilt

That is some impressive burnt hair :woohoo: I was not nearly so careful getting my "badge." About a half of a second after cracking the dome, and seeing the copious smoke pour out, I thought "Oh, sh**." By that time the blue flame cloud had cleaned my arm most nicely.

next time, don't do the "dwell" method with ribeyes.
i'll bet you the cost of the steak your #1 son ate that the "char" he tasted was the sooty smoke from smoldering fat.
the dwell method is ok for filets or maybe (maybe) strip steaks, but more than one of us has noticed that when you shut all vents, the fat continues to drip off a rib eye.
there's less fat in all other steak cuts, so you don't necessarily notice this... but the fat drips onto coals that are struggling to burn. they aren't burning efficiently, and that fat will smolder. it has no where to go, and coats the meat.
when the vents are open, the sooty smell is less of a concern because the fire burns the fat off quickly.
as a practical example of what i'm talking about, light a candle. the wick burns clean, no smoke. now blow it out. the wick continues to burn a bit, but inefficiently. it will throw off acrid smoke as it dies because it isn't fully combusting the fuel.
seriously.
try this next time and if there's no difference, i'll buy his steak.
cook it via the hut tub or Trex methods. you'll get none of the sooty fat like you do from the dwell method. -
