last night\'s terrific meal was 50-50

While it was 100% GOOD, I meant it was done 50% inside and 50% outside.
First I carved 21 balls out of a couple large potatoes using a melon baller.

Then into a skillet on the stove with butter and some oil. To get them looking and cooking the best you need to constantly attend to them and keep them rolling and browning.

Meanwhile I had hot tubbed a couple beautiful fillets so all they needed was a mere 2 minutes per side sear on my 675° small BGE.
Then the marriage of the potato balls and fillets with a blessing of Bearnaise sauce! The plated picture could have been taken better, but I was HUNGRY! That was a great meal and the better half is still raving about it this afternoon!

Good looking cook. Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd. -
RRP, that looks delicious.
I'd love to make those potatoes, but fear I don't have the patience or the time.

Over the years I've found using balls made using the small end of the melon baller cook better and are easier to cut near perfect spheres. Then with the leftover potato carcass I shred them and make hash browns for breakfast so literally there is no waste. Brunch today was hash browns, Italian sausage with grilled onions and green peppers and fried eggs! Great for lumberjacks and retired folks!Re-gasketing the USA one yard at a time -
