I cooked some'en:Salmon w/limon,capers&rosemerry

Between the monsoons hear in S. Ark, job, gardens and working on bike I have been tyed slam up. Miss the winter when I have plenty of time for forum and Egg. Did a quick cook tonight.
4 (6-ounce) salmon fillets
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon minced fresh rosemary leaves
8 lemon slices (about 2 lemons)
1/4 cup lemon juice (about 1 lemon)
1/2 cup Marsala wine (or white wine)
4 teaspoons capers
First of course the raws.

On the Egg at 300 pit till a nice weep on the fish with plenty of presimmon wood.

Ready to eat and bed as work at 4:00 am come quick! :blink:

Nice cook. Atlantic spring run salmon is here now. I picked up a bunch of whole ones for 3.99 a pound. Gonna be cooking a lot of them soon.
