Catfish! Don't know what I did. Pic heavy.

But it was the best catfish I have ever had in my life. Not really blackened, skillet wasn't white hot.
But used blackened seasonings.


Fresh on the CI skillet.

Decided to add a little butter.



Plated. There is a fine line between blackening and frying in butter. OMG it is good.

One of these days I'd like to have a cook out for a group and was curious about grilling back to back batches of blackened catfish on a CI grill. Any reasons why I couldn't fry 3-4 batches of blackened catfish on high heat one right after another.
Probably go with EVOO hoping it wouldn't burn as much as butter. Think'll work?aka marysvilleksegghead

I would be really tempted to use Grapeseed oil, it holds up to high temperatures much better the EVOO and the EVOO looses all its goodness at high temperature.

Peanut oil will take a higher heat and will not hold a flavor.
