Chuck's Quesadillas

I did a search and found Chuck's recipe for Quesadillas. I have been cooking these since I saw this post back in 2002.

I am into easy cooks right now and this one has to be one of the easiest!

I like to serve some homemade guacamole, salsa, and sour cream on the side. And I will usually sprinkle some taco seasoning on top of the pie.

I think I may do these next. Thanks Chuck!

    Thanks...glad you enjoy them. I think I'll do some for dinner tonight, maybe with shrimp. I too like guacamole etc. on the side. I guess I should give making my own guacamole a try....usually just get trader joes.

    They sure are good!

    A local morning show here in Cleveland had someone from Chipotle cooking a year or two back. They showed how they make their guacamole and posted it. Its the recipe I use. Try it out. Its good and enjoy!

    Spicy Guacamole

    1 large ripe avocado, peeled, pitted (I usually use 2 small since that's what we get here in Ohio)
    2 teaspoons fresh lime juice
    1/2 cup chopped fresh cilantro
    1/4 cup finely chopped onion
    2 large garlic cloves, finely chopped
    2 large serrano chiles seeded, chopped
    1/4 teaspoon salt

    Using fork, mash avocado with lime juice in small bowl. Add cilantro, chopped onion, chopped garlic, serrano chiles and salt and stir to combine.
    Makes about one cup.
