Spatchcock Chicken Results and Q's !

Hello All!
Thanks for all your helpful tips on my first spatchcock chicken!
I rubbed her down overnight with a mixture I found in "Smoke n Spice" cookbook,It was recommended for beer can chicken.I cut up 4 potato's 1 onion tossed in 1/4 stick of butter some scallions and a dash of parsley.Rapped it up in double tin foil pouch and let her rip.Fired the Egg up to 350° tossed the chic right on the hot oiled grill for 1 hr and everything was finer than frog hair!! I have a question about the chicken meat color.It looks like it has a pink hue to it in the light.. is this normal? My girl is really sensitive to undercooked chicken if you get my drift!!LOL ..I had a wireless meat therm in the thigh at first(from sharper Image) but something was not right..it went up to 160° in about 20min so I moved it to the other thigh and ditto.I was careful not to poke through or touch bone but when I moved the probe to the breast the temp was lower and seemed more normal to me.Can the direct grilling transfer heat that quickly to the thigh area?? Thanks again!!

    Regarding the done-ness of the meat, I've eaten about 30 of them cooked one hour on a raised grid at 350-375, and I'm still here. I too have noticed some pink around the bones and I was under the impression that this is ok. I'm getting a Thermapen in the next few days, so I plan to cook a chicken per my normal method and then check the temps. If I have to adjust the recipe on the website, I will after taking some readings.[p]TNW

    The Naked Whiz,[p]I'll be interested to hear your findings with the Thermapen. I too have noticed some pink around the bones, but never worried much about it. I've done about 4 or so direct on raised grid at 350 for 1 hour on the Medium, and every one of them was perfect.[p]TRex

    Did 3 Spatchcock Chickens this weekend, and used your setup, 1 hour, 350 degrees, direct.. used thermopen, and all 3 were 180 to 182 degrees after 1 hour. Wife said it was the best chicken I have cooked.
