'carb'less crust for pizza

I have a friend who is diabetic and controls it via his diet rather than pills.
He loves to eat pizza and has been trying to find a way to eat it with a crust that isn't made with flour and loaded with carbs.
He's open to any options and willing to try it. If you have an idea or recipe let me know. Worth a shot I figure to post it here since all the egger's are loaded with great food ideas!

flattened out chicken breast is about the only option, might be good too.fukahwee maineyou can lead a fish to water but you can not make him drink it

That's a good option actually. It would be good to season and is strong enough to hold up other ingredients.
Thanks for that idea! -
Zippy did one a while back with a pork crust.

Appreciate it greatly. -
Don't know if this would work, but... there are several grains that have low glycemic index (GI), for instance barley (22).... I've read that combining with other low GI foods lowers the overall GI for a meal. So perhaps a "crust" formed from pressed cooked grain? I don't know how well something like barley flour would work. Usually when a grain is ground to flour the additional surface area increases it's effective GI. So perhaps a blend of grains, with added fiber like oat or wheat, and a thin type crust would work.
Not knowing your friends history, I don't know how low he needs to go on the GI scale.

And I found this pizza crust using whole wheat pita pockets, split:
