Smokin' a Jamaican Fatty....

...well, actually three of 'em. Heavily dosed with black pepper and Jamaican Firewalk. I'm hoping they will be done for happy hour. I have some Big Chief maple/peach cheese to serve with them.

    A fatty is a one pound (minimum) log of sausage that gets smoked at 225° for about 3 hours, indirect over a drip pan. Take the internal to 170°ish, then rest an hour wrapped in foil. The breakfast logs at the supermarket work fine or you can roll-your-own fatties with homemade sausage. Any rub will work, but I like the contrarian flavors of hot and spicy if it's a breakfast sausage or a sweet rub it's a spicy sausage, like Texas hots. They are good to throw on after your main cook or anytime you have some extra room. Slices reheat really well. These are wonderful to take into work.

    You can stuff them with everything from hard boiled eggs to cheese, but I prefer the un stuffed ones.

    Try one, you'll always remember smokin' your first fatty.

    Funny you posted that. I haven't done a fatty or ABT's in a long while and picked up the stuff today. Off (technically) until the 5'th so a lot of old time favorites coming. Those look great.

    This is the first 5 pounds I did. I did add a pan of ice underneath and smoked it with maple and peach wood for about 90 minutes at 90°.

    The finished product looks about the same, some of the edges are rounded from the heat, but I don't go for a color change.

  • I just came across 5lbs. of peach wood and had the maple. Have you ever tried Sweetwood Chips? This 6lbs. is almost gone. :ohmy: The 2 people who missed thier delivery appt. I'm starting to rethink that move. :evil:

    WOW I'm on key typing but the dog ran out of the house while I sounded it out :blush: Yours look great so I hope mine come out as well. Old school pics coming next week. Also Hi Mountain arrived Wednesday so buckboard loins will be working.
