My Executive Secretary has been out of town at an in-law's wedding all week -- won't be back until Monday. In the meantime, I'm a-cookin' at least once daily.

Good luck with meats, as usual, but have been experimenting with root veggies...

Today --

Chopped up some rosemary real fine, added it to 1/4 C OO, along with plenty of S & P and squished garlic cloves... Let it sit for an hour or so...

Diced up carrots [3/4"] and parsnips [3/4"] and beets [3/4"] and Klondike taters [1.5"]... sliced a large onion to add in, along with some more sliced garlic --

Mixed it all together, and put the veggies into the Egg @ 425F for 1hr-20min... Stirred every 15 minutes, and added in rosemary infused OO as needed.

As I pulled the veggies, I did rib eyes...

Oh, yum! Something so simple as roast mixed root veggies...

Finish off the veggies just as you serve with a drizzle of OO...
