A Small Egg, a turkey, and the Fat Man's Chicken Kickin' Brine

I want to do a whole turkey or turkey breast in my small egg. How big a bird can you fit on a small? Any tips and tricks for the setup? Direct, indirect, dome temp, internal temp at finish? Any suggestions you can give would be appreciated...[p]I've also been considering brining it and thought I'd try the Fat Man's Chicken Kickin' Brine, but wondered one thing. It has Dave's Insanity Sauce in it and I've heard that that stuff can actually make a grown man cry with just a drop or two...literally melt your tongue stuff. This recipe calls for 1 TBSP of it!!! If any of you have used this brine, I'd be curious to know if it makes the bird super hot?[p]Thanks,

    The Fat Man's Brine is my favorite, however, the effects of a brine on the taste of a chicken is fairly subtle. I've never used the Insanity Sauce, I always just use Tobasco or Texas Pete for the flavor, but I don't think even the Insanity Sauce would make the chicken hot.[p]Regards,

    Chuck Lane,[p]I have used Dave's insanity sauce according to the recipe. You can tell it's there but is very subtle. I think Fat Man's brine is the best I have used. I am going to double the amount od DIS next time and see what, if any difference it makes. DIS is pretty potent stuff. I also have some of the reserve which is supposed to be 3x the heat, but it remains in its coffin.[p]-Tom
