Tonight's cook: Sliders

Did some ground chuck with some Tony's for the seasoning. Heated up the LBGE with a cast iron grill pan, and let 'er rip. Everyone was too busy trying to eat, I almost forgot to take some pics, so here's what I was able to get:

I really like the burgers cooked like that--the spices seem to hold up more not being exposed directly to the flame. Time for some lemonade now--it's HOT out there today!

I agree Mike. For some reason, I think sliders hold the flavor better. I think she is enjoying her slider.

Nice looking mini-burgs there Mike. I too noticed the Rudy's cup - I think our "cup drawer" has about 50 of them in there. They're great for the lake...especially when filled with key lime margarita!!

Yeah, I was going to put some pepper jack on there, but the new packaging for the cheese failed me, because there were some blue things growing on the cheese I was really bummed, but at least the sliders were tasty! I think that I shouldn't be trying to use fancy cheese one sliders--I should be using the regular american cheese.

Mini burgers. I like to cook mine on a CI skillet.

Those look great, Mike! I remember a while back I think AZRP [edit: it was WessB--thanks, WessB] wrote that he rolls the ground meat between sheets of waxpaper then slices them out. Is that how you do yours?

Pretty much.
I use some EVOO to get a better product and actually put in the freezer for a few minutes before cooking.

I live in Columbus, OH, home of White Castle Headquarters. There's one right down the street. I've never been able to replicate the steamed burgers and onions, so I buy a sack now and then. Add some onion chips, and you're good to go.
You're usually good to go the next day too, especially if you washed them down with a cold beer or two. Erik -
