Well, the mustard experiment went well. It's the rack on the top level. Sticky Fingers mustard-based sauce on that one to finish up the last hour of 3-1-1. The other two were painted with Sweet Baby Ray's:

I liked the mustard-based one: Swamp Venom, some French's yellow. However, I would have preferred the SBR sauce on that instead of the Sticky Fingers...
Guess I've cooked enough with all the seasonings of late that I can tell which one was which when we were eating

It was your tried-and-true method I employed to get the ribs from the cryo-pack to the serving platter. You were right--no complaints, just a big pile of bones at the end! -
