so I'm about to take off the chuck roast

that has been roasting at 250 for 6 hours. It's now about 170 degrees... I'll keep on until 180 then wrap and rest... then what? Do I pull it or slice it?

Pulling the roast off at 180 internal means you will have to slice or chop the meat. I think the temp is too low for pulling it like a pork butt.
