Mr Toad's pork Loin

Mr Toad's recipe says to cook to internal tempature reaches 140. Is this corect for pork? Thanks Check back a little later, have to tend to 95 year old Dad right Now.

Country boy,[p]Trichinae is destroyed at 137°F, so 140°F is a good temp. I pull the pork loin off the grill at an internal temp of 145°F (my preference). The internal temp will continue to rise after it comes off the grill.[p]Toad's recipe is outstanding![p]Puj

It was my pleasure. Thanks for making me curious enough to look it up. I used to work in a sausage kitchen and I do remember the inspector coming in and telling us that 137° was no longer accepted but could not remember what it was raised to. It was a long time ago.

Country boy,
I cook my pork roasts to an internal temp of 155-160 and make sure to let them rest for 10 minutes. I always take my temp readings from the thickest part of the roast. This seems to cook them to medium, the thinner portions cook to medium well.
