I had some of that the other night, Mike--tenderloin is one of those cuts I only get to cook every now and then. It's a really good meal when done on the BGE, and looks like you've got a good dinner there tonight.

Nice, easy, expensive meal Mike. :laugh: Those fillets are tastie but dang one just gets me started. :woohoo: Don't guess I have ever done any on the Egg. Been wanting to do saome stuffed portabellas just haven't got around to it yet.

That's the right attitude! I do not get to eat steak often, so when I do I want a good one. I try to buy aged beef over the net. Dry aged is best, but wet aged is still good. Just put the steaks on grid over a plate and cover them with a kitchen towel. Turn every day. At the end of three days, they will be as good as they can get. At the end of five days, throw them out. You just ruined a good steak. -
