I cooked some\'en: A proper caveman

Had no plans to Egg this weekend as I have to work all weekend 12 hrs till I got home this afternoon and found out my lovley wife was going to cook pork stake in the oven! :ohmy: Not going to happen!!Time to fire up the Egg and save some pork. I got to get some sleep so caveman was the quickest way and since there has been some discussion on it of late decided to do a quick pictorial on how I do it
First I took 4 medium pork stakes between 1/4 and 1/2 inch thick. Salt and pepper both sidea well and on mine I like rosemarry. Wife doesn't.

Next build a hot fire. The coals will be concentrated if you use a starter cube like me so spread them around and let get going good


After fire spread across Egg take poker or billy bar and knock ash down in grate.

Next chunk the pork on the coals about 1 1/2 min a side. When you flip some of the coals will be stuck to the meat. Just flick them off.


Toss on a couple chunks of smoke wood and cool Egg to 300-400. Not real exact and cook on grill for about to desired doneness. About 3 min a side medium, 5 min well.

Supper is served!!

Never tried it that way but it looks great. The food is easy but how do you get the dog to relax like that while the egg is going. Buddy goes Rambo every time I light the egg which makes the wife mad cause she usually goes to bed when I cook my dinner & her leftovers. :laugh:
Not to come across as an A hole she likes the food the next day but due to work goes to bed at 8:00 and gets up at 4:00 AM.

LOL I have very few skills but working with animals is one of the few. Sue understands that she gets nothing untill I DECIDE SHE GETS IT!! She also understands that she gets no "BAR B QUE" untill she eats her dog food every morning. IE No desert till you eat yur vegs! :laugh:

Yea thats what I told buddy but with his eye's he said if you have more than three beers your gonna drop something. Damn if he ain't right. Love my pets but prefer them to be less smart. Think I'm gonna get a snake next

Lookin' good there, man! I'll have to try the caveman method one of these days. Are you just doing that on fresh lump? I figured that there may be too much ash from an old batch which has already been cooked on.
Thanks for showing the way...I'm thinking about doing that with some flank/hanger steak for some fajitas. -

Course it will help if she has been plyed with a little of bills wine 1st! :laugh: -
Actually I like playing with my lump. I find it very relaxing.
Every time I Egg I grab a brew and remove all my old lump and toss it in a bucket for real and scrape out the old ash. Then put the desent size chunks back along with fresh lump and toss the small chips in the bucket. On a low and slow I'll use all of them. Have a GREAT TIME this weekend. Hope to see you next year! -

:laugh: ...too funny, man! Yeah, I also like to clean out the cookers really well before I get started. It's the same thing I used to do with the kettle grill--I'd never let any of the old stuff accumulate (because it would always burn out) and there'd be piles of ash in the bottom. Mainly, because I like to have maximum airflow through the cookers.
Yup, maybe we'll head up to OK next year if this one turns out to be good. That's about six hours from here, and they have their eggfest in the spring, when it's not really too hot. It was 98+ here yesterday, and the sun was beating down. -
Cook ribeyes on the coals all the time. We call them dirty steaks. try a couple of hickory chunks under the meat. hmm hmm good!

Yea, I used a couple chunks of presimmon on the pork. Beef I use hickory and presimmon.
