Tonight's Dinner (w/ pics)

Keeping the momentum going (since I'm headed back to hotel life on Tuesday), my dad and I hit the Egg one more time for a nice dinner.[p]But first, the appetizer: insulata caprese made with some fresh ingredients from the local Fresh Market:[p]
[p]We also stumbled upon a 3.5 lb standing rib roast and just couldn't pass it up.[p]After roughly 2 hours indirect at 275, here she is at an internal temp of 130:[p]
[p]After resting off the Egg for about 15 minutes, here she is sliced at an internal of about 135:[p]
[p]And then here's the rib roast plated with fresh corn, green beans, and crusty bread.[p]
[p]Overall an excellent meal.[p]Cheers,[p]TRex

dam dude. For someone who hasn't posted here in about a millenium you sure do add to the life here.
I am doing a top round for roast beef for this week's Sunday dinner as I am responding to this post and hope it looks at least half as good as your beef does.

Well looks like I have yet another reason to make it to Austin again...goota get that pic with the Rangers and TRex's...will add additional qiality to a photo not yet known to mankind:)
