Clay's Dutch Oven Pulled Beef Question...

Saw your recipe for pulled beef made in a Dutch Oven. Wanted to try it but only have a 5 qt, will that work or do I need something larger to hold 2-3 chuck roasts?[p]Thanks,

    Good morning, Yup, 5qt. will work fine for two roasts, but you will be heaping full with three roasts. You can make a lid from heavy duty aluminum foil if you cant fit the iron lid on. Stage two might take longer if packing three chuck roasts into your 5qt. so you could bump up the dome temp to 300 degrees for that part of the cook, then go back down to 250 for the third stage. If you want to play it easy, use two chuck roasts so you will have a little elbow room.[p]Nice day for Qing, I'm using the dutch oven for pork-n-beans today.
