Costco's netted turkey breast stuffed (4 pics)

<p />I really like these Costco turkey breast rolls. Here is the breast out of the netting. It is 100% white meat. [p]
I wanted to try stuffing one, so I butterflied that baby and loaded it up with prosciutto, provolone and slightly sauteed red onion, bell pepper, carrots and mushrooms in EVOO and roasted garlic.[p]stuffedturkey002.jpg[p]Next, a moderate seasoning with black pepper and Ken Stone's Witchy Red prior to rolling up. I re-netted it and seasoned the outside with more pepper and Witchy Red.[p]stuffedturkey009.jpg [p]The cook was indirect, 350 degrees with a couple chunks of pecan to an internal temp of 160 degrees[p]stuffedturkeysliced.jpg[p]When I pulled the netting off I also got some of the turkey skin. It was served with Cracker Barrel's hashbrown casserole and steamed broccoli. The family and brother/sister-in law liked it. [p]I unrolled one couple weeks ago and loaded it up with crack black pepper and re-netted. I dig that one better. [p]Just and idea for the new year and keeping on the health kick. Tom

  • eggor, happy new year to ya, Scott. This rollup had plenty of flavor. I just really enjoy smoked turkey with plenty of crack black pepper. Being able to unroll, butterfly and then reroll lets you put plenty of seasoning within the breast themselves, almost like injecting without the hassle of clogged injectors. [p]Tom[p][p]
