Dr. BBQ's Margarita Chicken

Well, last night I put a spatchcocked chicken in one serious marinade, using Dr. BBQ's Margarita Chicken recipe from his book. There's a whole cup of alcohol in it, including tequila and triple sec![p]He recommends a medium fire, cooking direct. Should I cook at about 350F, then? Maybe use the grill extender to get a raised grid? With all that alcohol and chicken fat, I'm thinking I'll need to be real careful with flare-ups.[p]Thanks,

Eggtuary,I would cook as you would any spatchcock chicken, 350F for about 1 hour, and I would use a raised grid.

I have found that with all of my spatchcock chicken and most other chicken parts recipes 350 extended grate works fine. Also I have found the best way to get and maintain a solid 350 is to leave the bottom vent completley open and set your daisy wheel where the small holes are completely open. (After you get your fire going)

Did you add the lime juice to the recipe? Think I saw somewhere that the book left that ingredient out and when I checked my copy sure enough it was missing. How was the chicken?
