eggsettera, I got one but don't know what to use it for. Any tips?

I got an eggsettera for my birthday but I don't know what I can do with it. When they talk about direct and indirect heat it makes sense to me but I don't understand what types of food are better with these types of heat. Thanks for all of your help and suggestions.

  • Nathan,[p]The eggsettera is real handy for doing baby back ribs. You remove the grid, put the platesetter in with the feet up, put a drip pan on the platesetter and put the grid back on top of the feet. Lay some racks on the grid and cook at around 250 for 3 hrs, take the ribs up and wrap in foil for another hour, and then remove the platesetter and the foil and finish the ribs up direct for about another hour. This is called the 3-1-1 method and there are examples on the forum, it's where I found out about the method. It works great. The platesetter is also supposed to be a great way to cook pizzas on the egg but I have not tried that yet. Good Luck and happy Q-in.
