I need a new pancake recipe! Who's got a great one?

I just made these https://life-in-the-lofthouse.com/ihop-pancakes-copycat/  and they were very good. Much better than the box stuff I've been making. And now it's got me on a quest to find the perfect pancake (I love IHOP when they are done right)

    first it doesnt have maine blueberries, second it doesnt have nh maple syrup, and heres an important part, the recipe says to stir the ingredients til smooth. you want to fold the ingredients for fluffy. other than that, it looks like a good recipe.

  • @Thatgrimguy The best I have ever had is from America’s Test Kitchen’s recipe. It’s a lot of work but very special.  They have whipped egg whites folded in to make them fluffy.  Magic!!

    Easy to put together the night before, and its ready to go when you wake up. For waffles, I'll add 1-2 TBSP of cornmeal or rice flour, to give it more crunch. For pancakes, I thin the batter with a little milk.

    I don't make nearly enough pancakes.  I need to buy a bag of those little microwavable ones from Wal-Mart.  Those are my favorite.

    One thing I've always done even if it was stuff out of the box.......

    Separate the eggs, mix the butter or oil with the yolks, and beat the whites into the milk prior to combining everything.  Always makes them fluffier than just throwing everything in a bowl at once.

    I have a recommendation on cooking - bacon fat.  Some bacon drippings on the griddle before you add the batter, gives the crunchy edge you get at cracker barrell.

    I love this thread!  Recently made pancakes from scratch and will save and check out all of the recipes.

    I also agree with @fishlessman that you need blueberries and real maple syrup.  I don't have access to Maine blueberries, or NH maple syrup, but I do have VT maple syrup!  

    The recipe I followed has you adding vinegar to the milk to sour it.  I assume this in place of buttermilk.  Turned out great!

    I'm sure Kent Rollins is on the right track, but I've used this recipe for decades and never found anything better.

    1.5 cups primary batter*
    1 egg, beaten
    ½ TBS sugar
    Mix well.
    Add 1 TBS oil
    ¾ tsp salt
    1 oz milk
    Mix well, again

    Ladle onto hot (400°F) griddle.
    Serve with plenty of butter and real maple syrup.

    *Primary batter:
    ½ cup sourdough starter
    1.25 cups flour
    1 cup warm water
    Mix until smooth
    Cover and proof 12 hours in warm spot
    Cincinnati, Ohio. Large BGE since 2011. Still learning.

    Great aunt’s old recipe. I use it for pancakes and waffles.   Beat eggs and oil together well then add rest of stuff . 

    1 Large Egg, Blackstone griddle

    1 tbsp of vinegar for every cup of milk to make the buttermilk........but there's also a dried buttermilk you can buy and mix in with the flour just for taste.

    Best pancakes I ever ate were in Hawaii at a restaurant: buttermilk pancakes with vanilla macadamia nut cream sauce over it. The chef gave me the sauce recipe but said the pancakes were just a boxed premix called Conniseur. It was all delicious...of course the view plus the french press pot of Kona coffee helped too!!

I've tried finding the Conniseur mix too but haven't had any luck.

    Thank you, I'll order some. I could never find it, I'm guessing I was spelling it wrong. Here's the recipe:
    1 pint heavy cream
    3/4 cup sugar
    1/2 tsp vanilla

    2 T macadamia nuts
    2 T cornstarch mixed with water
