Labor Day brisket thread
Come on, lets see them!
This prime packer went on the egg around 6 a.m. Just salt and pepper, over Rockwood and cherry chunks. Got this one from the local butcher. My Costco doesn't carry packers, or I would probably do one every week haha!

Currently still in fridge waiting for this rain to get out of here... raining since 3:00 a.m. And wanted to get started at 5. One thing to get started in the dark, it's another when lightening is non stop..

I will be doing two flats tomorrow, both a little over 2lbs, total about 4.5 lbs. I have only ever done packers before, do you estimate the time on the 2 or 4.5 lbs? I am assuming these will be a lot faster than the packers and just not sure on temp, I always ran about 300 dome temp on the packers, should I do these lower?

Here is my offering. Put on at 6:30 last evening and around midnight looked at my phone to see what the temp was thinking at some point I’d be wrapping in butcher paper. Not so- no stall at all and was done at 2:30 this morning. Quickest brisket I’ve ever done. Brought inside and FTC till late morning and carved up. Half in slices and the rest for burnt ends.

Just picked up a super floppy 11.5 pound prime packer from Costco. Going on late tonight/early morning for tomorrow.
