Tacos made from leftover pulled pork with radishes, tomato, onion, avocado, feta cheese, and salsa verde with yellow rice on the side - washed down with a couple Coronas - makes for an outstanding meal. Unfortunately I couldn't find Queso Fresco anywhere nearby.

If you feel intrepid, making queso fresco is a great way to use milk before it expires, or just buy milk and make it. Super easy. We made some last Sunday for saag paneer (it's the same cheese, different application).
