Dry Aged Ribeye for America's Birthday

I dry aged a whole ribeye for fathers day and it would have been 45 then but 2 weeks of work trips popped up and it turned into a 60 day dry aging project. What better way to celebrate the 4th than some dry aged steak. reverse seared them and wow what a flavor. I have done 2 rounds of 45 days and think I like that a little better but the 60 day still was great. thanks for looking.

Nice! Did you do anything special for the aging process? Temps? Humidity? Etc...Southwestern CT

I used the Umai dry bag and put it in the beer fridge out in the garage. other than that I don't have a lot of control over the rest of it. it is the third one I have done and great results every time with the dry bags.
