Went on at Midnight Saturday.  Cooked at 250 with Rockwood and a couple of chunks of post oak.  Wrapped in B/P after 10 hours for about 2.5 hours.  Unwrapped and back on for another 1.5-2 hours (accidentally took a nap while the little one was taking hers).  Pulled and sat in cooler for about 2 hours.  Served with baked been and green chili corn bread muffins.  Funny side story I have to share.  My daughter who will be 2 next month loves Brisket.  When I brought it in to wrap, she saw me caring it in.  With out either of us saying anything, she climbed up into her high chair and buckled herself in.  I didn't realize what she was doing until she asked me to clip her tray in.  I felt so terrible telling her it wasn't done yet and that she was going to have to wait a bit longer.  She chowed down though when the time came.

    Agreed, great brisket and story. My daughter is just a little over 7 weeks old. My wife laughs at me because while I hold my daughter, I tell her about all of the grilling/smoking we're going to do together when she gets older. I don't want her to grow up because she's so adorable but at the same time cannot wait for her to get older so we can enjoy those experiences together.

    I did the same thing with my daughter.  The first weekend she was home her and I made some ribs.

    I parlayed that into telling my wife that we needed to get a small egg for her :).

    Great result and story right there.  Trained her right, for sure.  Congrats.
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.
