Legs are done but breast isn't

Mine is a 12lb turkey. The breast is at 125 and the legs are at 178. I wrapped the legs with aluminum foil about 15 minutes ago. I thought the leg temp would be lower than the breast. No one here is a big leg eater but I may just lose them. I'll pull at the correct temp for the breast.

Any suggestions.

  • Turn it breast side to the back. That's the hot zone. Legs can go higher and still be good IMO

    That sounds like a big spread difference on the temp.  Check in several spots.  If that is truly the temp of the thighs you can rotate the bird to where the legs are facing the front of the egg.  It is generally hotter near the hinge.  You can't hardly over cook the dark meat. I've run it up to 200 before with no ill effects

    I like my legs and thighs a little warmer than 180, often I'll took chicken legs to 200...  but that's me.  Don't sweat it if they get over 180, it will still taste great!

  • With a flame boss probe in the breast and a maverick probe in the leg turning won't be an easy chore.  Breast is up to 139 and the leg has been holding steady at 189 so I think I'll just wait it out unless the leg goes over 200.

    The flame boss has done a great job of holding the temps. Most of the variances are tied to me opening the lid to baste the turkey.

    Same thing here @SaintJohnsEgger I had my legs facing towards the back of the egg and they are reading 180 while the breast is at 130. Just tented with foil and spun the turkey around with the legs towards the front. Cooking a 20# bird at 350. Been on for 1 1/2 hours so far. should be done in 3 hours. We should both post pics of our birds on this thread when they are done. Oh....Im doing madmax turkey!

    I would still take the couple
    minutes to take out temp probes and rotate and then reinsert. May be overthinking, but if there is a meal to take every precaution......,,,
