Made the stuffing out of cream cheese, shredded cheddar, and some leftover rub. Had extra filling after I stuffed all my jalapenos, so I stuffed a few tomatoes as well, they were awesome too... Next time I'll cut them lengthwise instead of off the top, to prevent it from leaking out.
