It's been a while. Broke out the wok. Cashew chicken.

.chicken thighs, velvetted. Broccoli, sweet peppers, purple onion, garlic, toasted cashews. Sauce is soy, oyster, sesame oil and pickled ginger. Easy and oh so good.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

@gunnar open the whole time. Close the bottom vent most of the way.
