Happy thanksgiving Eggheads!!! This is how I'm doing it this year. I'll update as I progress.
Trader Joe's 19lb pre-brined all-natural fresh turkey
Spatchcocked
Chillin in the fridge for approx 36 hours
Will rub with a new batch of Mickey's coffee rub an hour or so before it hits the egg
Plan on raised direct at approx 300-350 with some soaked cherry chips

Looking very good. I like the cherry not wet.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

Since I'm planning on a direct cook with no drip pan, I am making a stock now out of the neck, spine, giblets, and trimmings. Will use it For the gravy tomorrow.
