Those are the result of a slightly modified 3-2-1 method. It was probably 3-2-2 because my wife was held up and got home late. I just closed the Egg completely down and let them stay warm in there. I actually think it thickened the bark. Also, I used the Texas Brothers BarBQue rub that I got as a sample. That might have helped the bark too.Best - Jack
