Was celebrating my nephew's b-day with smoked babybacks and rotiss'd wings, when my brother insisted I watch this episode of Chef's Table on Netflix Season 1 Episode 3 featuring Francis Mallmann, out of the Patagonian Islands.  

From his wild, primal cooking style to philosophies on life, this dude just went to the top of my favorite chef personalities.

Fellow brothers and sisters of the fire craft, If you have an hour to spare you will not be disappointed.  The last 5 minutes is epic, from the music to editing.

    This book looks interesting.  Kaminsky worked with APL on Charred and Scruffed.

    No prob, seems like a solid series.  He had me watch another chef from MA, who fed his chickens red peppers to create a reddened yolk, cool stuff.

    I first heard of Mallmann when I discovered his Seven Fires, Grilling the Argentine Way, an awesome cook/philosophy book. The PBS series, The Mind of a Chef, has a Mallmann episode too.     The griddle he uses is absolutely bada$$.  The guy goes out on the lake, catches a trout with a fly, digs up clay around the lake, completely encases the fish in it, and tosses it in the embers.  
    On the salt crusted salmon, he rolled the skin off, looked amazing. 
    Would bet he won the Grand Prix tossing those taters on his griddle. lol

    Found a OTG kettle on CL for $35, from a RN couple(VA Infection Control, and U of IA ICU) in Davenport.  Was his father-in-laws grill, probably used a couple of times, sat on his walk-out basement slab covered by the overhang.  Dude even threw in the like new brush.

    DU stamp on the damper makes it 2002.  Brand new they are $150 at the local True Value.  

    Was driving home from the hardware store after buying the $20 charcoal baskets, sans lid, not strapped with the wheels to the side, done this many times before.  Hit a curb going too fast on the ramp of the I-74 bridge, saw in slow motion the grill tip over and fall over the side of my Taco.  It fell flat on its face, charcoal grate, cooking grate, scattered.  A truck ran over the cooking grid, which I was planning on replacing with the OTG grid I already have, dedicating one to the rotisserie.  Ran around the bridge ramp dodging oncoming traffic picking up my grill pieces while my nephew and son are in the truck with the hazards on.  Complete douche move.  Only managed to scuff up two small spots on the bowl rim.  Fixed them up with some flat black BBQ paint.  Got lucky lmao......


    Shined her up quick with a couple of old rags, water, and Dawn.  They sell Weber spray bottle grill cleaner for $8. lol


    As you can see, barely used


    Pretty handy trick my brother showed me covering up the WSM rotiss holes with high heat tape.  Been using foil balls the whole time. lol
    Marked the vent settings at 50% and 100% with a Sharpie.  Found some Comp K on sale at Schnucks for $7 a bag.  Couple of chunks of cherry.

    Chillaxin' with my son and nephew

    Decided to break her in with a bird.  Ran a little hot as expected being a clean grill.

    A nice smaller scale pit and $55 diamond in the rough for the Mallmann recipes.  Looking forward to reading his books on the hammock while tending the fire.
