First attempt at smoked eggs & cheese

I made my first attempt at smoking some eggs & cheese. I have to say that I amazed myself. I did boil & peel the eggs first due to threatening weather in the forecast.  Still learning to tweak the temp, but I'm learning. I used a mix of apple wood & pecan.

    what do you do with the eggs now?  what did the weather have to do with cooking and peeling the eggs ahead of time?

    what temp and how long?

    We were looking at severe thunderstorms moving through all day and I didn't want to screw things up if one came through. The last couple were strong.  At a low temp due to the cheese, those eggs would have taken quite some time. I wanted to stay around 135 degrees for an hour and a half to 2 hrs, but I'm still learning this thing. I ended up around 175-190 for 45 mins. The pan of ice under the cheese saved me.  As for the eggs...we ate some and I gave them to friends and family that love smoked eggs.

    Those temps are certainly on the high side for cheese.

    They are, but like I said...I'm learning how to get the temp where I want it. Only my 3rd time using it
