Another wonderful pork butt, blade roast, shoulder yada yada!
Rubbed night before with Paul Prudhommes [pork magic and Kosher salt and peppercorn grinder, EVOO.
Wrapped in plastic and refrigerated overnight
On the egg at 4:30 am at 250F with cherry chunks pre-soaked (5)
After 7 1/2 hrs internal hit 175F and I foil wrapped with 1 cup apple cider, and some Kinders hot sauce, back on egg at 250F still.
45 mins later , internal hit 203F, FTC'd for 1hr 15 mins, shredded, added au jous from foil wrap back on meat and served on Potato buns with a cole slaw kit from Safeway, little bit of sauce.
Pork took on a pleasant light smoke with cherry chunks only.It was moist and delicious with incredible bark.
Total cook time 8 hrs 45 mins for a 6lb butt
Prepping for a babyback cook today! Enjoy your holiday weekend and thanks for reading!
