This evenings menu Mahi w/ fresh pineapple salsa, pineapple slices & spiral zuc, squash and onion pasta w/ fresh parmesan cheese.
Started with fresh ingredients for the pineapple salsa. Refrigerated for the remainder of the cook.
Lit the fire. Stabilized at 425℉ w/ CI skillet.

Lit the fire. Stabilized at 425℉ w/ CI skillet.
Preped the Mahi.
CI skillet blackened the Mahi.
Reverse seared the pineapple slices. While @HuskerMaMa was making the fresh spiral zuc, squash and onion pasta w/ fresh grated parmesan cheese.
Began the plating process eggside...plated 6.
End credits.

@hapster. Thank you. Fish cooks quick so I I had to move quick to get it plated and in front of guests while it was still hot to trot. But, thankfully this was a group effort and our Son was my runner/sous chef. And HuskerMaMa is getting crazy good with plating. Oh no you misunderstood, I'd be at every game as well if I could afford it. Nothing better then hearing 'Mr Touchdown USA" walking into the stadium after a great tailgate. I sincerely think that this could be the best defense since Suh was here, just hope that Armstrong or whoever ends up playing QB can be consistent enough to let Abdullah and the boys run wild. Almost needs to be a breakout season because I get a feeling Eichorst is sitting there silently wanting to make his mark on the program. Since obviously the last two big hires that Dr. Tom made before retiring (Miles and Erstad) are coming up spades.I raise my kids, cook and golf. @Scottborasjr no I knew what you meant brother. I really miss going to the games. I used to go to every home game when my Grandparents were alive (had season passes). There is seriously nothing like it in the world. Agree this D is looking strong and I think Tommy will produce quite well. Mouthwatering :-bd . I know you've heard a million things about your table, but I never thought about the functionality aspect. That thing rocks. I use wooden Eggmates and I like them compared to not having anything. But seeing you setup six plates at once, not to mention the clean sterile looking field, is awesome. My Eggmates have some kind of colored stain and they got grease spots that won't clean off. I think I'm in need of some SS. Once again, today's cook was mouthwatering ^:)^Steven
