Sam's Member's Mark Angus Ribeye Steak (primal)

Just bought a 14.5 lb. whole primal ribeye from Sam's. It was $8.97/lb. Since it was Certified Angus Beef with good marbling, I decided to go for it. The primal had a 2" lip on it so I asked the butcher if he'd go ahead and cut it into 1 1/4" steaks. He said sure thing so we went and picked up a few more items while he got it ready.
Came back to pick it up and he had been able to get 10 nicely trimmed ribeye's out of the primal cut. The best news of this was that they were re-weighed so what we expected to be $130 was actually $92. All the waste from the lip etc. we didn't have to pay for. The same steaks pre-cut and packaged for sale were almost $2 more per pound.
So, it certainly is a much better deal to have them cut and re-weigh in the store instead of just taking it home and cutting it yourself unless some useful way to use the trimmings of fat etc.
I'd like to hear any comments regarding this cut of beef from Sam's. It's our first time to buy whole primal from Sam's. Thanks.

I know! I asked them if that was standard and he said yes, that they want to take care of the customer. Needless to say, I'll be back.

Regardless of the bad press some here give SAMS I for one have been quite happy with the sub-primals I have bought many times from them for my dry aging. What works for me is to go in early in the week after restocking from the weekends and I'll find 18 to 24 packages to pick through. While it takes a little effort I have discovered you can read the large end for the amount of marbling to reasonably expect. I also buy my fillets from them plus my pork butts and chicken wings as well. BTW the beef comes from Excel.Re-gasketing the USA one yard at a time

I have had great luck with the meat from Sam's, both fresh and frozen. Have bought brisket, loin, steaks, ground beef, butt, pork chops, chicken... Usually a decent price and selection is good during the week. Weekend, not so much.LBGE
