Ideas for leftover prime rib (I'll start with Prime Rib Eggs Benedict)

I am sure everyone has some great ideas for that last bit of prime rib from the holidays.

We had a three bone roast for 4 people so had some leftover.  Here's my idea for the last bit we had.

Prime Rib Eggs Benedict
Crispy hash brown cakes, topped with thin shaved prime rib, a poached egg and Bearnaise sauce. 

How did you use any leftovers that you had?

    man, that looks frikkin' delicious!  I'd hit that.   We make sandwiches with a creamy horseradish sauce, or I'll slice and hot tub some and eat it like freshly cooked PR.
