    Refuse to play with polytetrafluoroethylene, didn't get my teflon flu shot.  Pans get hot quickly, and omit some nasty sh!t.  If you cannot get fond=flavor, or have to use special utensils for fear of compromising the pan's finish and your health; what exactly is the advantage with so many other viable options that you mention?  Low fat diets perhaps, or adding teflon flakes to the diet??? 

    “In new tests conducted by a university food safety professor, a generic non-stick frying pan preheated on a conventional, electric stovetop burner reached 736 degrees F in three minutes and 20 seconds, with temperatures still rising when the tests were terminated. A Teflon pan reached 721 degrees F in just five minutes under the same test conditions (See Figure 1), as measured by a commercially available infrared thermometer. DuPont studies show that the Teflon offgases toxic particulates at 446 degrees F. At 680 degrees F Teflon pans release at least six toxic gases, including two carcinogens, two global pollutants, and MFA, a chemical lethal to humans at low doses. At temperatures that DuPont scientists claim are reached on stovetop drip pans (1000 F), non-stick coatings break down to a chemical warfare agent known as PFIB, and a chemical analog of the WWII nerve gas phosgene.

    Brandon, I completely agree with that assessment.   I only use teflon for eggs, and I cook them at a relatively low heat compared to the limits of the material.  

    I think I was fair listing the advantages and disadvantages of teflon.  You expounded on the disadvantages.  I also think I have the self restraint to not overheat it. 

    For fun yesterday, I listed a host of dangerous byproducts of wood combustion just to illustrate how having a fear of fiberglass (Rutland gasket) is silly to focus on when you're basically bathing your food in a who's who list of toxic gases on the egg.

    I like to think that I am informed enough to not live terrified by everything around me that's dangerous, yet not stupid enough to actually poison myself.

    Like I don't believe the dangerous misinformation that keeps parents from not immunizing their children (because they think they could get autism) which results in many real people getting sick and dying.  Seriously, how many die from teflon poisoning?  I've never heard of one.  Maybe its contributing to cancer or other illness, but hopefully the pans that generate the deadly dose at least self destruct and stick afterwards. ;)

    There are some cancer clusters and birth defects from factory workers at Dupont where these kitchen products have been manufactured.  With the majority of PFOA/C-8 getting released not during the manufacturing process, but from use.

    PFOA is like BPA in that it's everywhere.  BPA has been banned in Europe - why not here?  Because douche-bag chemical company lobbyists.

    from wiki: "How general populations are exposed to PFOA is not completely understood. PFOA has been detected in industrial waste, stain resistant carpets, carpet cleaning liquids, house dust, microwave popcorn bags, water, food, some cookware and PTFE such as Teflon."

    Lots of dangerous stuff everywhere.  The new car smell that everyone loves?  Out-gassing from all kinds of manufacturing processes and materials.

    I am not worthy!!!  Nice inventory @Focker!!!  Several years ago, when the GFU and I set up our cohabitation, I purchased a bunch of Calphalon One pieces, which have served us very well.  They cook well, and clean up even better.  The problem is that they need to be treated with respect, otherwise the coating will scratch.  I hate to let anyone use them.  If I were to replace them, I'd go with something that could stand some abuse.  It's sort of like buying a fancy car, and worrying about where to park it out of harms way.  Takes some of the pleasure out of driving it.

    Same story with nice knives.  I've recently sharpened up some very old Chicago Cutlery knives, and I encourage others to use those.  Hopefully the Shuns will be saved from being thrown in the sink, or stuck in the dishwasher.
