Pot Roast 'n Cornbread

When it comes to budget dinners, Spring Hen and I are quickly becoming "see what's in the freezer first" spend-thrifts.

Tonight we had a thawed pot roast, good the first time and even better this time.

Along with that we made some 'kicked up' Jiffy Mix cornbread.

It was a delicious dinner. We already know that a good pot roast and/or cornbread can be wonderful when you really want some 'down-home' food.

But I learned how to make it even better.... Yes-sir-ree-Bob... Made it better than it was before.

I had a glass of Hondoring 120 Cabernet Sauvignon (from Chile) wine to go with it. I was absolutely blown away at how the wine enhanced the flavor of both the pot roast and the cornbread.

And all this time I thought wine was for Special Occasions.

But when you think about it, a good dinner at home with the one person who means more than anything else in your life IS a Special Occasion.

    That's awesome! I am in the clear out all the old frozen food before buying more mode as well. I've got a a chest freezer and the fridge freezer full of....just full. I am trying to remedy that.

    I will have to save that quote for a night when I dont feel like going out but she wants to.
