They all work. After trying all of them, I now use the paper towel 100% of the time. Easy, cheap and quick to temp. A no brainer for me.1 · -

Lots of people like the cedar planks but I prefer the alder. I just do not care for the "turpentine" taste from the cedar. Alder chunks/chips/smoke is perfect with salmon.2 ·
