    Haha thanks for all the info, guys. I picked up two patties from Bristol Farms. One had jalapeños, cilantro in it. One had bacon and cheddar. 

    No oil, got egg to 500, let cast iron warm up a bit. Did about 3 min each side. They cooked fast! Prob around 135-140 when I pulled but were plenty pink inside. And the crust was fantastic. I'm gonna do burgers this way more often.

  • Pizzzzzza night!

    didn't have time to make my own dough so I picked up some from whole foods.

    made my sauce from this recipe. Was really good:

    setup: legs up, grid, tin foil balls, pizza stone. Let the stone heat up for 45 mins.

    First one (cooked) was boar's head pepperoni and green pepper. Cooked around 600. Was really good.

    second one was smaller and easier to toss and stretch. Used fresh mozz on this one, shredded parm, and crumbled goat cheese. This was one of the best pizzas I've made. Great crust, paper thin everywhere else. Cooked around 700 just to see what would happen. So damn good. 

    I love cooking pizza on the egg!
  • Flank steak

    marinated a flank steak all day with soy sauce, olive oil, honey, red wine vinager, cayenne pepper, worcestershire, pepper, minced garlic. 

    Cooked direct, 600 degrees for about 2 minutes each side.

    and my goodness was it fantastic. So tender, good sear. One of the best steaks I've done and so
  • Pizza with whole foods dough (and pics)

    was lazy so bought some regular pizza dough at whole foods. Left it on the counter for 90 minutes or so to get room temp. Topped with sausage, mushrooms, green pepper.

    got egg up to 500, let pizza stone heat up with it and gave it 30 or so minutes to hear up once it got to 500. Legs up, 3 foil balls.

    came out great. Cooked for about 12 minutes. Dough was airy and delicious. Would def use again. Easy to work with.
