I tried a new recipe last night. Sliced some boneless skinless chicken breasts in cutlets and pounded thin. Roasted some pablano peppers and rolled the roasted peppers and some cubes of Monterey Jack Cheese up in the chicken and wrapped in bacon and dusted with Dizzy Pig Shaking the Tree. Put them on the egg at 375 indirect until they were 170 internal (about an hour). Served with a big baked potato. They were moist and had great flavor. Wish the bacon would have been a little crispier but overall it was good. May do at a lower temp next time to help with the bacon...and there will definitely be a next time.
