  • Re: Tis The Season To Roast Chile Peppers

So if a Hatch chili is just an Anaheim pepper grown in/around Hatch, is there a significant difference? One that a chili novice would notice? Or is it mostly marketing hype?

No, a Hatch chili is just a *New Mexico* pepper grown on Hatch farms.

There are a variety of different chile cultivars called "New Mexico" peppers, or "NuMex." They were bred from Anaheim peppers, but are generally hotter.  Hatch is merely a place that grows New Mexico peppers. I seriously doubt they grow any plain Anaheim peppers there, as it would be an insult.

If you get any peppers that have some heat to them, they are definitely some type of NuMex and not Anaheim.  Some of those cultivars are DAMN hot too. There is a cultivar called "Dynamite", and I think it's only from CO.

I don't know if there's anything magic about Hatch. It could just be that the climate is ideal.  I know here in CO,  the growing season is a bit too short.

The stuff at the stores has caramel coloring added.

It's not a false quote. It was merely translated to contemporary English.  The meaning is the same. Don't be daft.
Um....that is contemporary English to start with.
Sorry. I retract my post. The quote was indeed modified and 'murica'd.
I blame my error on multitasking.

  • Re: Hatch Chile Salsa

I guess this is just a southwestern thing.
If you don't appreciate New Mexico chilis, you are sad, sorry, taste impoverished individual!

They aren't the best for salsa, though.  They are best for making pork green chili.

lard + flour + pork + roasted green chilis + salt + maybe tomatoes = awesome. Eat it with tortillas, or over a burrito.

There are many different cultivars of the New Mexico Green Chile. They've even got some that are super hot.  Nothing close to a habanero, Thai, ghost, or anything like that, but they make up for it in mass.

  • Re: Windows 8?

I hate Microsoft as much as the next guy but Apple kind of sucks too, for a different reason. They always know what's best for you and you do it their way or else. If Apple had an ice cream store, there'd be one flavor, and it'd be whatever was Steve Jobs' favorite.
