Nice. We've done something similar inside with pork sausage, cream cheese, bell pepper, and onion for the filling. Pre-cooking the shell definitely helps. Got to try the taco filling - that sounds good!
BTW, do save a little time when you or your guests are hungry, pre-cook the shells ahead of time and put them in a sealable container - they'll keep a week or two before they go stale.
