I did one on Thanksgiving. It did not take that long and it came out perfect. I wouldn't over-smoke it. Used one chunk of applewood. I bet I only had it on for about 25-30 minutes.1 · -

I always foil right when the butt reaches 190-192. Then I place in the dry cooler. I've left them in the cooler that way for 3-4 hours before, they always come out perfect. Do what works for you…1 · -
