I'm doing a 5lb brisket for tomorrow's Super Bowl (GO BRONCOS).  I'm using a Pioneer Woman's recipe and it is in a metal pan in her marinade.  She calls for cooking 40 minutes per lb @ 300 in the oven.  It is in the aluminum pan and covered in foil.  I would like to sear it to have some burnt edges.  My question is should I sear it at the start of cooking or at the end?  Also, I'm not sure about cooking it on the egg covered with foil. Any suggestions?
